I've been putting this off for a while. Most of my current recipes already come from blogs, but since I've started changing many of them and getting inspired to create new recipes, it's time to start participating!
My food story: I love to cook. Mostly because I love to eat (and so does my family). I don't even enjoy eating out as much as I used to because I've found that I use more fresher ingredients at home. I'm not a gourmet chef. I just like to keep it real.
Several months ago, I was diagnosed with Hashimoto's Thyroiditis. For those who've never heard of that it's an autoimmune disorder. My body basically decided that it hates my thyroid and now they're at war.
Even though I take my medication every day, I still experience a lot of the symptoms. Changing my diet has been the only thing to help alleviate the symptoms. I'm not perfect but I've learned to face the consequences of my food choices.
On a good day I try to eat gluten-free, dairy-free (because I'm lactose intolerant) and sugar-free. It gets easier over time and I've discovered a lot of great recipes to help me along. Unfortunately, a lot of them take a long time and I don't always have all the ingredients. With three kids, I don't always have extra time for cooking so I've come up with some shortcuts and easy fixes for healthy food.
